You can use either here. You would not essentially need to say "academic break" in English, as the idea is covered through "universities", and I would be happy to go with simply "break", but it could work :

"Brazilian universities take a break during carnival"

"Brazilian universities take an academic break during carnival"
Example sentence:

"UK universities and colleges traditionally HAVE A BREAK three times during the academic year. As many international students are now discovering, one of these BREAKS is just about to start or may have already started at your institution."

Not sure but I don't see any reason to not translate literally here as the term exists. It all depends on who the target reader is and the level of formality required of the document.
